....... any quick, easy recipes for meals for 1 person - I'm a bit bored with the usual stuff, & have run out of ideas. Besides, I can't eat candy cheesecake all the time, can I ? :rofl

Chris...I make a full meal then freeze part of it for later dates. Saves me time later on.

Got tortillas over yonder? I keep a package of whole wheat tortillas on hand for quick snacks or meals. Just sprinkle some shredded cheese and whatever you got leftover from the night before between 2 tortillas and nuke'em for a minute for a quick quesadilla. Also great for making breakfast burritos with scrambled eggs, bell peppers, onions and sausage or bacon. :99
Quick snacks you can spread a little peanut butter and honey on a tortilla, roll it up and eat. Heck, if all else fails spread a little marmite on a tortilla. :drool
Other than that, all I can think of are sammiches. :o

:ty 2 great ideas. Theres nothing I love more than a roast, with all the accompaniments, but even a small jopint of meat last me 3 or 4 meals, & I get bored with it before I've finished it ! I could cook family sized quantities & freeze them in individual portions on disposable plates.
We do have tortilla wraps over here, & I haven't had a burrito for years. I've got a large piece of fish to cook for lunch tomorrow - before it starts to hum, but for a light meal in the evening I could have a breakfast burrito. Yummy ! And I LOVE Marmite, it's so good for you :ty

I like to stop off at a Chinese restaurant and pick up a large order of egg-drop soup. When I get home I add some canned (or leftover) chicken, and small cans of peas&carrots and creamed corn. Maybe add some pepper, onion powder or whatever's handy if you like.
How 'bout 'Macaroni & Cheese'?
Add 1/4lb or so of ground beef, and a small can of peas&carrots and one of whole kernal corn, plus pepper, etc. if you like.
I tend to use canned soups a lot, and add things to them to make them a bit more than just 'soup'. ;)

What we do around here is cook a bunch of chicken breast, hamburger steak, whatever you like and after it's cook package it in individual portions. Then it's ready for side dishes. Some of the favorites are:
Hamburger seasoned with Taco seasoning then bake a potato in the microwave, when it's cooked oped it up and put the hamburger on top of it heat up the hamburger and then add whatever you like. Salsa, sour cream, cheese etc.
Cut up chicken breast warm in the microwave, then mix in some cream of chicken soup and frozen mixed veggies and heat it up and then top it with some instant mashed potatoes or those frozen biscuits and you get a good little chicken pot pie
Last one: Pull out a hunk of foil, put some cooked hamburger, some baby carrots and cut up potato a little ketchup, salt and pepper. Fold it up like an envelope and bake it in the oven till the potatoes and carrots are tender. Meat loaf in a packet and nothing to clean up.
Oh wait, one more: If you like fish you can do the same thing, but leave the fish raw. Foil, fish, spices, slices onion and lemon. Bake for about 1/2 hour and it's done. It's great with salad.
Just about anything is possible if the meat is cooked already.

Left over roasts are great to "play with" Add to some beef broth with a can of mixed veggies...instant beef veggie soup
We take shredded beef toss it in a pan with Pace chuncky salsa/ or any other brand you like...heat throughly and wrap in tortilla with sour cream. cheese and other taco/buritto toppings... You can take a half cup of salsa and 1/2 cup water then make the instant rice in it.... viola instant mexican rice....add to the shredded beef.
Morning hash browned potatoes gan go in anything... reheat in a pan not the microwave they get "squishy". Put in eggs, put it in a meatloaf...
Have fun with all the ideas you're going to get..Just don't gain weight,
if you do it's NOT MY FAULT!

Freezer section of the grocery store......packages of slow cooked crock pot meals. They're great! Throw them in the crock pot and let them do their thing. Makes the house smell yummy and you can grab a bowl when you want to eat. Stews.....Chicken and Noodles....etc.

This was certainly easy anyway. And turned out even better than I'd hoped. I put the leftovers in the freezer. It should keep very well.
Little brother is big on deer huntin'. This year he gave me some very good home-made venison sausage. Here's what I did with six patties...

Not sure if this really ought to be called "stew" but it's the closest thing I can think of. It would probably be good with potatoes added, then I'd feel more like it was really a "stew". :-)
6 Venison sausage patties
1/2+ cup diced sweet onion
1 - 11oz can whole kernel corn, drained (Green Giant "Niblets")
1 - 15oz can black beans, lightly rinsed and drained (Goya)
1 - 10oz can diced tomatoes and green chilies (Rotel "Original")
1 - 8oz can tomato sauce
black pepper
dried, minced garlic
Worcestershire sauce
Brown the venison and crumble it up as you do. I put the corn and onion in at the same time as the raw venison and cook them all together. (I like my corn a bit chewy.)
While the venison is browning add some Worcestershire sauce, black pepper and just a little minced garlic and let them all cook together. (I did not measure any of this stuff, just added what seemed reasonable. I feel like I went fairly light on them though.)
Once the venison is cooked as done as you like it pour it into a pot with a lid.
Add the black beans (lightly rinsed), tomato sauce and "diced tomatoes & green chilies".
Simmer it all together for maybe a half hour to heat everything evenly and let the flavors blend a bit.
It's ready to eat right now!
I think it came out very well! (That's why I bothered to write up this recipe. :-) )
I did not think to add any salt. Once I ate it I was just as happy because it seemed fine without any. It could be the home-made sausage had plenty in it. I don't know. I do know they used a commercially available spice mix when they made the venison sausage, and I -think- they added some beef fat.

:ty Thanks Iron Ed, that looks absolutely delicious :drool. I'm not so sure about the chillies, but I have some cubed venison in the freezer, which I could mince, & I have the other ingredients in the store cupboard. Can't wait to try it :drool:tban

You might be right about the chilies. I discovered that the "Original" version from Ro-Tel made things rather spicy. :) They also make a milder (and a hotter) version. I only had original on the shelf at the time.
Cubed venison is going to taste different from venison sausage. Probably no spices in the cubed version, or at least different spices. Should still be good though!

For non-hunters.. Most wild game tends to be very lean and needs the addition of fat to get the ground meat to hold together in patties.

I added some barbeque seasoning to the venison when I was mincing it, & used some mild chilli powder to give it a bit of extra oomph, as I didn't fancy using the tomatoes with chillies, in case it was too spicy. Also, I couldn't find black beans so I used kidney beans instead. I did see some dried black beans after I'd made this dish, so I may get some in for future use. There's enough left for 2 more meals, so it has worked out very economical (I may freeze what's left). :drool

Your version certainly sounds good to me!
If I'd had it on hand I would have used the milder version of "diced tomatoes & chilies" myself. ;)
I think kidney beans make a good substitute for the black beans. When I make chili I use 1 can of kidney beans AND 1 can of black beans. One o' these days I'm going to try pinto beans. :)
