Will this do ...... ?

Sticky toffee pudding

Serves 4-6

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
55g/2oz butter
170g/6oz demerara sugar
2 tbsp black treacle
1 tbsp golden syrup
2 eggs
200g/7oz self-raising flour
200g/7oz pitted dates
290ml/10fl oz boiling water
1 tbsp bicarbonate of soda
½ tsp vanilla extract
For the sauce:
110ml/4fl oz double cream
55g/2oz butter, diced
55g/2oz dark muscovado sugar
2 tbsp black treacle
1 tbsp golden syrup
For the moulds:
30g/1oz soft butter
30g/1oz flour



Method
1. Butter the moulds and dust with flour and preheat oven 200C/400F/Gas 6.
2. Using a food processor cream the butter and sugar together.
Slowly add the golden syrup, treacle and eggs. Continue mixing until the mixture looks smooth, then turn down to a slow speed and add the flour. Mix until everything is well combined.
3. Add the boiling water to the dates and tip into a blender. Secure the lid firmly and blend to a purée.
4. Add the bicarbonate of soda and vanilla.
5. Pour this into the batter while it is still hot and stir well.
6. Pour into the moulds and bake for 20-25 minutes until the tops are just firm to the touch.
7. Make the sauce: simply place all the ingredients in a pan, bring to the boil, stirring a few times and then remove from the heat. Put to one side until ready to use.
8. Remove the puddings from the moulds and place on plate. Coat with the warmed sauce and serve with good vanilla ice cream.

This is my recipe

4 ounces of chopped dates.
1 pint of boiling water.
half a teaspoon of bicarbinate of soda.
Soak this together for a few hours, i generally do this the night before.
2 ounces of margarine.
6 ounces of sugar.
Cream margarine and sugar together,then add 1 egg,fold in half a pound of self raising flour and stir well with spoon.
Add date mix and whisk up well.
Put into casserole dish and put in oven 200 degrees for 30 mins or 140 degrees for 50 minutes, make sure you use a large dish as this does rise very well.

Sauce , dont make this until last minute.

4 ounces of butter
half a pound of brown sugar.

Melt slowly together then add half a pint of whipping.

ENJOY. TNT.

With the holiday season approaching here are two delicious recipes for shortbread,if you like these i can post others.

10 ounces of margarine.
4 ounces of caster sugar
3 ounces if ground rice
12 ounces of plain flour

Cream the margarine and sugar together and then add the ground rice,cream well together.
Sift the flour into this and mix well.
roll out mixture unto a board or worktop sprinkled with a dusting of ground rice.
cut out using your holiday season cutters and put on tin in oven 140 degrees approx. These usually take 35 minutes, when you take these out of oven sprinkle with a dusting of caster sugar.
try to leave them to cool.


Grans shortbread.
8 ounces of butter.
4 ounces of caster sugar.
8 ounces of plain flour.
4 ounces of corn flour.
use the same method of making up the mixture, but roll out in a dusting of cornflour.



Wheaten shortbread.
10 ounces of margarine
4 ounces of caster sugar.
4 ounces of desiccated coconut.
cream these well together.

2 0unces of soda bread mix.
2 0unces of plain flour.
10 ounces of speedicook oats or porridge oats.
Add these dry ingredients into the creamed mix and roll out using dusting of flour .Use your holiday cutters and cook in oven temp 140 degrees.

demerara = raw cane sugar
Muscovado = kinda like brown sugar
caster sugar = superfine sugar (but I don't know what that is either)
treacle = molasses

I knew what treacle was but was clueless on the sugars.

Sticky date pudding with butterscotch sauce

Serves 12

Degree of difficulty: Low

You need:
1 1/4 cups pitted dates
1 cup water
1 teaspoon bicarb soda
60g table margerine
2 eggs
3/4 cup sugar
1 1/4 cups SR flour
1/4 teaspoon vanilla

Butterscotch sauce
3/4 cup brown sugar
150ml cream
125g butter
1/4 teaspoon vanilla

Method:
1. Check oven shelf position (middle shelf) and turn on oven to 180C. Grease and flour muffin trays.
2. Measure dates and chop into small pieces. Put into suacepan.
3. Measure water into saucepan and place on stove.
4. Bring dates and water to boil, reduce heat and simmer until dates are mushy.
5. Remove from heat and allow to cool.
6. Beat eggs. Measure table marg.
7. Measure and sift flour and bi-carb soda onto plate.
8. Measure and add sugar and vanilla to date mixture. Add marg.
9. Add eggs gradually, stirring well after each addition. Fold in flour and soda with a wooden spoon.
10. Spoon mixture into muffin tins and bake for 12-15 minutes.
11. Turn out muffins onto cake cooler. Cover with a clean tea towel to keep warm.

Butterscotch sauce
1. Measure sugar, cream, butter and vanilla into a saucepan.
2. Combine all ingredients - bring to boil while stirring.
3. Turn down heat and simmer for 5 minutes. Stir occasionally. Keep warm in a jug.

Serving Suggestion: Place one sticky date pudding onto a small plate. Pour a little butterscotch sauce over pudding, place a scoop of icecream beside pudding and garnish with mint leaves.

Rum and Raisin Sticky Date Pudding with Butterscotch Sauce

Ingredients

1 cup water
1/3 cup rum
250g dried dates, chopped
100g raisins
1 teaspoon bicarbonate of soda
125g Australian Butter
2 eggs
3/4 cup castor sugar
1 teaspoon vanilla essence
1 1/3 cups plain flour
SAUCE

150g Australian Butter, extra
1 cup brown sugar
1 cup PaulsThickened Cream
Method

Place water, rum, dates and raisins in a saucepan.

Bring to the boil, stir in bicarbonate of soda and allow to cool completely.

Beat butter, eggs, sugar and vanilla until thick and creamy.

Combine with date mixture and fold in flour, mixing well.

Pour into a buttered 6 cup capacity ovenproof high sided dish and bake at 180°C for 45 minutes.

Pour over a 1/3 of the Butterscotch Sauce and cover with foil.

Bake for a further 20 minutes or until firm.

Serve warm drizzled with remaining sauce.
BUTTERSCOTCH SAUCE

1. Combine extra butter, sugar and cream.

2. Cook gently for 5 minutes or until smooth and thickened.

You can't get much more english than the recipe below. There is a famous hotel called the Three Ways House in Chipping Camden in the Costwolds here in the UK. I think it is once a month they hold a special weekend where guests book from all over the UK. They stay overnight, and all they eat is puddings! This club is so famous it has been featured on many TV shows over here, and they even have a recipe book with their recipes.

This recipe is for their famous Sticky Toffee puding, which has won numerous awards:-

Sticky Toffee Pudding - The Pudding Club

Ingredients
120g butter, 180g soft brown sugar, 4eggs, beaten, 240g self-raising flour
1 tsp bicarbonate of soda, 240g stoned dates, chopped, 2 tsps Camp coffee, 300ml boiling water

Method
Cream the butter and sugar. Add the beaten egg a little at a time. If it starts to curdle, add some of the flour. Sieve the flour and bicarbonate of soda together, and fold into the creamed mixture. Add the dates, coffee and hot water and mix thoroughly. It should be a very soft batter. Pour into an 8 inch (20cm) non-stick cake tin and bake for about 1.5 hours at 180°C or Gas 4.

Butterscotch Sauce: 60g butter, 150g demerara sugar, 1 tbsp golden syrup, 150g evaporated milk

Method
Melt the butter, then add the sugar and syrup and stir until dissolved. Pour in the milk, turn up the heat, and beat until boiling. Serve hot.

Oh Kate I would love to go there! I saw that hotel on BBC America. I was watching Rick Stein’s Food Heroes, and they featured a segment about the hotel, and the pudding club.:tban
