I must try this tomorrow:-

PUMPKIN FRITTERS:-

600g grated pumpkin
250g Feta cheese, crumbled
1 finely chopped onion
2 crushed garlic cloves
3 tbsp plain flour
Olive oil
3 eggs
1 red chilli pepper (optional)
Salt & black pepper

In a large bowl, make a batter by beating the eggs & mixing in the flour & crumbled feta cheese plus a pinch of salt & a good grind of black pepper.
Remove seeds & skin from the pumpkin & grate the flesh into the batter.
Fry the onion to soften, & add the chilli & garlic for a further minute, then add to the batter mix & mix in.
Pat into burger & shallow fry until golden brown on both sides. These can be cooled & stored in the 'fridge, & warmed through in a hot oven when needed.
