OK...here is my first step into the cooking thread...have I told you I'm NOT a cook...my kitchen is my loading room...but I'm looking for a recipe to take to a shoot next week.
They're having a chili cook-off and a dessert cook-off so I'm thinking I'd like to make a dessert...but the fridge/freezer are not working in the camper right now...so I need something that can handle the heat...remember it's still over a 100 degrees here. :lalala
Anyone have any brilliant ideas?

Look at the pamperedchef.com site, for recipes. (No affiliations, but I love their products).
Do you have a pretty, large glass bowl or trifle dish? And a fridge or really good ice chest?
The Pampered Chef recipe for cappucino trifle, made with instant pudding, cool whip, coffee granules and store bought pound cake, layered. Easy. Yummy. Has chocolate in it an on it, too! :lalala
Or ...fruit trifle. Layers of Sara Lee pound cake, cut in fingers or slices, layered with sliced fresh summer fruits such as peaches and plums, and vanilla pudding.
Tastes best when chilled for a few hours so the cake can absorb some of the pudding and fruit juices.

I have several cold pudding and jello dessert recipes that I actually know how to fix...but I have to travel 6 hours in 100+ degree then wait 12 more hours in 100+ degree heat until time for dessert with no fridge and only an ice chest...I don't think the cold stuff is going to work.
But you're right, Pampered Chef recipes are great for non-cookers! :lool I'll have to check the website for ideas.

:tban How about a Summer Pudding ? I've never made 1, but I know it's quick to put together, doesn't cost a fortune, & is better for standing for a few hours. It's made with seasonal berries, bread & sugar. Would probably be very nice with a little added kirsch or some other fruity liqueur, & a huge dollop of whipped cream on top at the last minute. You could also grate a small amount of white, milk or plain chocolate on top. There must be a recipe on t'internet somewhere. I'll have a link & post the thread if I find 1 :tban

Summer Pudding
700g (1½lb) Prepared Fruit (Blackcurrants, Cherries, Gooseberries, Mulberries, Strawberries, Raspberries, Redcurrants, Rhubarb)
110g (4oz) Sugar
6-8 Large Slices Bread, crusts removed
5-6 tbsp Water
Fresh Fruit or Mint Sprigs
Wash and prepare any combination of the fruit.
Stew gently in the water and sugar until soft but retain their shape.
Remove from the heat and allow to cool slightly.
Cut a round of bread, to fit the base of a 1.1 litre (2 pint) pudding basin.
Cut the bread into fingers and line the sides of the basin with them, overlapping slightly.
Carefully pour the fruit into the prepared basin, retaining 3 tablespoons of the liquid.
Shake the basin slightly to ensure the fruit fills to bowl.
Cut the remaining bread to form a lid and cover the fruit,.
Cover with kitchen foil, then place a saucer plate or saucer that just fits inside the bowl and place a weight on top.
Allow to cool.
Place in the refrigerator and chill overnight.
To serve, run a knife round the edge of the basin to loosen.
Invert on to a serving dish.
Pour the reserved liquid over the pudding.
Garnish with fresh fruit and sprigs of mint.
Serve with cream.

how about Cookies " Gutbuster Brownies"
take 2 packages of brownie mix
add 3/4 bag of chocolate chips
add nuts if you want
mix according to package
put in cake pan (9x13) sprinkle the remaining chips on top
bake according to box
really really rich and yummy...and lets face it everyone loves brownies
Cookie uses the cheap brownie mix, don't need to buy the expensive ones

Everything I can come up with requires something that you won't necessarily have :( (mostly refergeration). I do have a devils food cake with raspberry filling and cream cheese frosting, but that's probably more complicated than you are looking for.
Will keep thinking.

I've done the Cappachino Triffle, Man is that YUMMY!!!!
How about a crockpot desert? Crockpot has several desert ideas that are very tasty. Baked cinnamon apples is one of my favorites. No fridge needed. Just a thought....
