:beg :beg Help! Blackheart and I both operate our businesses from home. It's a 3 minute commute for each of us, if we put on shoes:rofl I love it! One downside, though, is that we eat almost every meal at home because of our work schedules. After 15 years and approximately 5,475 lunches (Blackheart makes breakfast:tban ) I'm looking for some new ideas that are very quick and very easy. Oh, and we eat anything! Would you share your favorite fast meal recipe with us? :ty :ty

Take flour tortillas or wraps, layer deli-sliced lunch meats - ham, turkey, etc., cheese, and whatever produce you like - my favorite is sliced cucumber and green peppers. If you want to add some mayo, mustard or ranch dressing, it's tasty that way too. Wrap up like a burrito and eat...... Quick and easy!

We add pepperoni to our grilled cheese sandwiches. Much more filling and a nice new twist on an old favorite.

:yp I simmer a chicken carcass, or any left over bones from chicken legs or wings. Remove the bones after they have been simmering for an hour or so, & add a generous amount of fresh broccoli, leeks, a parsnip, some diced swede, & any other veg you think will blend well with the other flavours. I don't recommend adding carrots or sweet peppers, as the finished result will have an unappetising colour. Throw in a chicken stock cube or 2 to taste, & a little crushed garlic if desired. Add a touch of black pepper, & blend. The quantities are by trial & error, but it makes a lovely thick & nourishing soup. Freeze in individual portions when cooled down. When desired, re-heat (quicker & easier if re-heated in microwave), & serve with warm, crusty, buttered bread rolls or baguettes. :yp

Parmesan cheese (grated) and bread crumbs mixed together (same amount of each) sprinkle some salt, pepper, garlic powder and italian seasoning. Dip chicken breasts in melted butter or olive oil and then dredge in cheese/crumb/season mixture. Bake at about 350 for 30 minutes or until done. Serve with a side of pasta and broccoli (steamed almost done). This is a wonderful quick meal. Prep time is less than 15 minutes.

Make a batch of chunky pasta (I like wagon wheels or bow ties) Heat up a can of diced tomatoes (nuke-em in a bowl) when the pasta is done, strain it, & dump the tomatoes on top. Add a little Italian seasoning maybe a slight drizzle of olive oil, and a bunch of parmasan cheese.
I think i saw Rachael Ray do something like this & I adopted it for my own taste.

'taters, diced small (I like redskins 'cause yuh don't have to peel 'em!)
carrots, diced
pepperoni / summer sausage / bacon bits / etc, diced
Put 'taters and a -little- water in a microwavable container, cover and nuke fer 2-3 minutes.
Add carrots and nuke fer another minute.
Add meat, a little ranch dressing and whatever seasonings yuh like, stir it together and nuke fer another minute.
If you want you can add a little broccoli and/or collieflower at the end and nuke a bit more. Too much nuking makes these mushy.
Of course yew can always add other things like a small can of corn, baby limas, etc. in the later stages if you want.
How much 'taters, carrots, etc. depends on how hungry yuh are. ;)

Take a brisket or tritip cut of meat and put into a crockpot, pour a small jar of salsa over it and let cook all day on low. When cooked take forks and shred the meat, add to tortillas with shredded cheese, beans, lettuce whatever. A real quick and good taco/burrito meat and yummy...

Dice up cooked chicken (leftover chicken works great too) place in large bowl with lettuce ( any kind will do I like bib) mix with ceasar dressing, add coutons. Stuff in tortillia or eat as salad.

These are great!!
4 - skinless, boneless chicken breasts or 4 to 6 pork chops.
1/4 cup mayo
1/4 cup or more to taste of parmesen cheese
Italian bread crumbs
Mix mayo and cheese together, spread onto tops of chicken or chops
Sprinkle with bread crumbs ( and garlic on the chops if desired )
Bake at 350 to 400 for 30 minutes. Uncovered and do not turn over.
Fix some yellow rice and some veggies. Nice and quick.
PS... if the breasts are thick, then I make diagonial cuts almost through, and put some of the mayo mixture into the cuts. Makes them even better.

I fed Mel this, tonight. Just didn't have time to cook up a good Sunday dinner after a CAS match today. :blush
2 cans of Hormel beanless chili
1 Tbsp of Best Foods or Hellman's mayo
1 lb. spaghetti
4 smoked hotdogs
Everything heats up in the time it takes the pasta to cook. Shoots, you can even dump the hotdogs in with the pasta if you want. Add the mayo to the chili while it heats up. When the pasta is ready, just spoon some chili over it and add a couple hotdogs to each plate. I nuked/steamed some cauliflower on the side.
For quick on the go meals, I make quesadillas. Just get either the Italian or Mex blend shredded cheese and a cold cut meat of your choice. Pepperoni is always good to keep on hand. I spread some cheese on a 8" flour tortilla, place some pepperoni on the cheese and spread a bit more and top with another tortilla. Nuke for about 1 minute or until the cheese melts. Cool for a minute and cut into wedges. Great with leftover chicken also. It's very basic and you can get as creative as you like.
You could also make crockpot meals the night before. Just let the meal go on a low heat till it's time to eat the next day. This way, you can still get a meal that would normally take hours to prepare and cook. Stuff like stews, chili, pot roasts, soups etc. :)
Oops, forgot to add this for the crockpot.
If you like Hawaiian imu food such as kalua pig, you can use a pork butt or shoulder or a parted out 12 lb. turkey.
All you need is rock type sea salt and liquid smoke.
Sprinkle the meat of your choice with the salt and pour about 1/4 bottle of liquid smoke
over it and let it go on low heat for around 6 hours or until the meat easily shreds. When done, shred the meat and place it in another bowl or pot. Skim the liquid and pour over the shredded meat before serving. This works really great with turkey for a low fat, healthy alternative. Don't forget the poi.

Okay, here goes:
Cook up some instant rice (however much you need, but about two cups per person). Then after it's done, add a can of cream of chicken soup and a can of chicken broth. Put all of that into a baking dish.
Take boneless chicken (I keep frozen skinless boneless chicken breasts in my freezer all the time) and precook these in the microwave. Add the precooked chicken to the top of the rice, sink them in some. Sprinkle it all with your spices (salt & pepper) --I usually add garlic salt too.
Cook this for about 15-30 minutes and you're ready to eat.
I can make this meal in about 30-45 minutes. This is taking the frozen chicken from the freezer to the time it's on the table ready to eat.
