I hope a couple of you can help me.
Please, oh PLEASE, I need a easy and yummy chili recipe.
Beans and beef please.
I've been using a recipe that is good, but, I want one that is GREAT and easy.

Mel's Chili
2 lb. lean ground beef
1 onion, chopped
2 6 oz. cans tomato paste
6 6 oz. cans water
1 clove garlic, mashed
salt and pepper
1 30 oz can chili beans
2 pkg. Lawry's chili seasoning mix
Brown meat, add onion and sauté until tender. Stir in tomato paste, water and garlic. Simmer until thick, about 2 hours. Add remaining ingredients and cook about 15 minutes longer. Serve as is or over spaghetti topped with cheese. Serves 6.
* I like a thicker chili so I use two cans of beans. ( If you are old enough to remember the TV show Alice, this is Mel's famous chili recipe.)
I found this recipe when we lived in Texas and have used it since. It's simple and tasty! By the way, I have never served it over spaghetti! I just make my homemade cornbread.

The reason I'm asking is; you may have seen my posts of my new renter, Boot Hill Biker, who LOVES Chili. He is on permanent disability for manic depression/bi-polar disorder. I have been working on a program through work regarding mental health disorders and have learned that a lot of people have food allergies that are the cause of many of their issues. I've been cooking for BHB and leaving out salt, keeping it low fat, adding more vegetables and protein, and NO PRESERVATIVES!! He seems to do much better when he stays away from anything in a can, especially anything with MSG in it (it's a neurotoxin if you're wondering). He won't ever be cured, but he functions a lot better when he eats better. Since he is manic a lot of the time, my house has been a lot cleaner and odd jobs (including painting my toenails :lool ) are getting done. This is the closest I'll ever be to having a butler! :lool :gg
For those who are wondering, my flowers are blooming, but the yard needs some weeds pulled. BHB mows, but doesn't know a peony from a dandelion, so no help with the flower beds from him.
Also, I've been working on applying for a promotion. So, that takes up my time.
Being a single working girl with a "new charge" (BHB) has reduced my Alley Time and sewing time :sewing considerably. I'll probably be posting more whenever BHB moves out (he says he loves living at my house), or when winter comes.

Okay Adah here you go...
1 onion chopped
1 lb beef or pork cubed (we use whatever is inexpensive and cut off excess fat)
1/2 lb bacon diced
1 large cans diced tomatoes
2 large cans pinto beans
1 1/2 t ground cumin
2 T Chili powder
2 T granulated garlic
Fry bacon til done, remove and save enough bacon grease to saute onion next. Add meat and brown lightly. Put in tomatoes and spices and let simmer about 2 hours. Add beans (drain and save liquid if you need to add if chili is too thick) about 15 minutes before serving.
Adjust the chili powder to taste, Cookie says not to add too much cumin or it will give it a "dirt" taste....
Enjoy!!!! We made it the last time with "country" ribs and it was yummy. But any roast cut up is good

The ONE best thing I found about making ANY chili is to take a round roast, cut it up and grind it in a meat grinder. That meat is AMAZING.
