Ok ... I am looking for fish recipes ... sauces to go on fish .... Southwest is always delightful.
For years we ranched and supported "Eat Beef" Now hubby hardly ever eats beef ... perfers fish! I need new recipes, and what better place to go than to the Belles for yummy tried and true recipes!

This is a item that we make during the Minnesota fishing opener. We use walleye but you could use any type of white fish. It makes a quieshe of fritata. the measurements are approximate it is usually done by handfulls.
4 walleye fillets poached
1 pkg cream cheese cubed
1 cup sliced mushrooms
4 slices crumbled bacon, or ham chunks
1 can Rotella tomatoes with green chiles drained
1 cup cheddar cheese
1 pkg frozen spinach thawed and drained well
salt & pepper
Put above items in one of those fancy baking dishes, we use a cast iron chicken fryer!
in a bowl mix
6 eggs beaten
1 1/2 cup pancake mix
1 cup milk
pour over everything in pan
If everyone is hungry start on stove top, and finish in 375 oven, if they are not awake yet. just put it in the oven for abou an hour till it firms up and in golden brown.
I think we do this cause it works without fish too!!

This is great for trout or salmon:
put onions on the fish, dab with butter and a bit of brown sugar. Put sliced oranges (with or without peel) on top of that and seal in foil.
cook on grill or in oven.
My other favorites:
sprinkle Morton Hot salt on it (or any of the seasoned salts or Mrs. Dash). whhoooooeeeee!!!!
Make a sauce of Orange juice and soy sauce with a bit of ginger and garlic powder. bake in oven with sauce poured over top.
another is to pour a can of stewed tomatoes over fish and bake.
Or you can bread it (try Ritz crackers!!!) and bake it in the oven.
fry up a slice of bacon for each serving, crumble it and cook fish in bacon grease and sprinkle with bacon. (note: today most bacon has little grease. We cook it in the grease, pat the grease off and sprinkle the bacon bits over it. One 3 oz filet is not a lot of fat!).

Here's an oriental offering good for butterfish, salmon or mahimahi. I guess black cod would be the closest to butterfish, which this sauce was specifically for. This is popular in Hawai'i.
Butterfish Miso Yaki
7 slices of butterfish
lemon juice
sauce:
2/3 C white miso
3 T. sugar
2 T. soy sauce (Kikkoman is good) do not use the cheap stuff that has added salt and sugar.
1 T. rice vinegar
2 T. sake or white wine (sake is better)
Chopped green onion
1 clove garlic
1 piece ginger
Sprinkle fish with a little lemon juice and set aside.
Mix the sauce and pour over fish making sure all sides get a coat of the sauce. Let marinate overnight. Bake at 350 for 25 minutes or scrape off most of the marinade and broil over hot coals. For butterfish, do not overcook. The meat has a tendency to get really mushy instead of firm like most overcooked fish.
