I got this recipe from Karen Sommers, Sweet Tart------WHO IS STILL LURKING AND HAS NOT JOINED YET!!!!!!
COWBOY APPLE PIE
First
Place 2 cups raisins in small pot. Add water until raisins are covered, then boil until water is absorbed.
Second
Add the following ingredients to large pot:
1 gallon apple juice
4 cinnamon sticks (break up)
4 cinnamon hard candies
1 teaspoon allspice
1 teaspoon whole cloves
1/8 teaspoon nutmeg
2 teaspoons vanilla extract
2 cups of raisins from step one
Bring to a slow rolling boil for 15 minutes. Stir occasionally. Let cool then strain with cheesecloth. I use coffee filters but it takes a bunch because you need a new one for every cup or so that you strain.
Third
Put back on burner and add the following ingredients:
½ cup brown sugar
3 tablespoons pure maple syrup
Bring to a boil again, stir until sugar is dissolved. Cool again.
Fourth
Add the booze:
2 cups Bacardi 151 rum
1 cup light or white rum
2 tablespoons Hot Damn cinnamon schnaps
For best results, let it sit for about two weeks. You can drink it right away, but it’s better after it sits awhile.
