This has been a favorite with my family especially around the holidays. (Cuz I'm too lazy to make it any other time):lool :lool :lool
Cheesy Potato Casserole
10 medium potatoes, about 3 lbs
1/4 cup butter, melted
1 small onion, chopped (optional)
1 tsp. salt
1/4 tsp. pepper
1 8 oz. carton sour cream
1 10 oz can of cream of chicken or mushroom soup undiluted
2 cups shredded Cheddar cheese
3 Tbl. Melted butter
1 1/2 cups herb-seasoned stuffing mix
Cook potatoes in boiling water for 30 minutes or just until tender. Drain and let cool to touch. Peel and cut into 1/4 inch strips and set aside.
Combine 1/4 cup butter and next 5 ingredients in a large bowl; gently stir in potatoes and cheese. Spoon into a lightly greased 13 x 9 x 2 inch baking dish. Combine 3 Tbl butter and stuffing mix; sprinkle over potato mixture. Bake, uncovered, at 350* for 25 minutes or until thoroughly heated. Yield: 10 servings.
