A bit of background...I have winter coloring, so I rarely wear oranges or yellows because they make me look sickly. Consequently, the underskirt I cut out and sewed together today is a beautiful changeable peacock blue/green silk shantung. From the scraps, I decided to make something for the hubby while I was at it. He came home from work in the middle of my sewing. :sewing I called out, "You're close to having a puff tie. Wanna see?" He walked in and remarked "That doesn't look very pumpkin." I asked, "Why should it be pumpkin?" "You said you're close to having a pumpkin pie. Wanna see?" Had to get busy and bake one for him. :rofl

Since pie baking interrupted my sewing, I still have to add all the hardware to the tie. When I get it done, I'll try to get hubby to stand still for a picture. (Maybe if I tell him he doesn't get another piece of pie until he does.)

PMS, Amazing how taste (pun intended) varies from person to person. It's surprising that some people can't stand what other folks don't want to live without. Good thing pumpkin pie is delicious, even without the crust. Lots of vitamin A, too. (But don't mention that part to the hubby) :noe

My husband loves pumpkin pie, but i dont like it at all......yewk, but down here we eat pumpkin soup, yummy, but husband wont even try it....

I like punkin pie, but really love good sweet potater pie. My grandmother used to make the best pie, no written recipe, it was all in her head and was buried with her. Anybody got a good recipe?

CFCF, I suspect you're right... and of course, I rewarded that behavior, so it's not likely to be the last time he does it. What a vicious circle ;-)

Betty Crocker has a good recipe (see below), but if'n that's too fancy for ya, a pumpkin pie recipe works for sweet potato, just substitute mashed/pureed sweet potatoes for the pumpkin.

Sweet Potato Pie with Cornmeal Pastry
Enjoy a classic pie made southern style with cornmeal pastry and topped with lots of whipped cream!

Cornmeal Pastry (See Below)
2 eggs
2 cups mashed cooked sweet potatoes
3/4 cup sugar
1 2/3 cups evaporated milk
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Cinnamon-Pecan Streusel (See Below)
Sweetened whipped cream, if desired


1. Heat oven to 425°F. Make Cornmeal Pastry. Beat eggs slightly in medium bowl. Stir in remaining ingredients except Streusel Topping and whipped cream. Pour into pastry-lined pie plate. Bake 15 minutes. Make Streusel Topping.
2. Reduce oven temperature to 350°F. Bake 35 minutes longer. Sprinkle Streusel Topping over pie. Bake about 10 minutes longer or until knife inserted in center comes out clean. Cool completely on wire rack, about 2 hours. Serve with whipped cream.

Cornmeal Pastry



2/3 cup Gold MedalŪ all-purpose flour
1/3 cup cornmeal
1/4 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water

1. Mix flour, cornmeal and salt in medium bowl. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons water can be added if necessary).
Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.

Roll pastry, using floured rolling pin, into circle 2 inches larger than upside-down 9x1 1/2-inch deep-dish pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim and flute pastry edge.

Cinnamon-Pecan Streusel



1/3 cup packed brown sugar
1/3 cup chopped pecans
1 tablespoon butter or margarine, softened
1/2 teaspoon ground cinnamon

1. Mix all ingredients.

Prep: 30 min
Start To Finish: 4 hr 15 min


Makes 8 servings

Buck, just keep stickin to that story. My FIL annoys my MIL by turning his hearing aid off. We're never sure what or whether he's heard... Now that's true selective hearing!

Clancy and Kitty, thanks for the compliments! I was pleasantly surprised at how easy the puff tie was to make. It's a little stiff in the shantung, so I think I'll try a more fluid fabric next time and see how that goes.

Pumpkin soup sounds good. At the Salish Lodge in Washington state they serve a squash soup that's yummy; I suspect the pumpkin tastes similar.

Banana Pudding

INGREDIENTS:
3/4 cup plus 1 tablespoon sugar
1/3 cup cornstarch
Pinch of salt
3 cups milk
8 eggs, separated
3 tablespoons butter
1 tablespoon pure vanilla extract
3 cups vanilla wafers
4 ripe bananas, thinly sliced
1/2 teaspoon cream of tartar

Preheat oven to 350°F. In a large saucepan, combine 1/3 cup sugar, cornstarch salt; stir until blended. Mix in milk. Cook over medium heat, stirring constantly until thickened and boiling. Boil 1 minute, then remove from heat.

In a small bowl, whisk egg yolks, then whisk in about 1/2 cup of hot custard until blended. Pour yolk mixture back into saucepan of custard; cook over medium heat, stirring, 2 minutes. Stir in butter and vanilla until blended.

Place vanilla wafers on bottom of a shallow 2-quart casserole dish. Top with layers of banana slices and custard. Repeat layering, ending with custard.

In a large mixing bowl, beat egg whites and 1/4 cup sugar at low speed until frothy. Add cream of tartar; increase speed to medium and gradually beat in remaining sugar. Beat until egg whites hold stiff peaks.

Spoon meringue over hot custard immediately, making sure that meringue touches baking dish on all sides (this prevents it from shrinking). Transfer to oven and bake until golden, about 20 minutes. Remove pudding from oven and cool 1 hour. Refrigerate at least 4 hours before serving.


Oh yeah, did I mention that I cook?

Banana Pudding
1 big box Instant Banana Pudding
1 big bowl cool whip
several bananas (not fresh)
box of Vanilla Waifers

Line bowl with Nilla waifers
Make the instant pudding according to the box
Mix with the cool whip
Slice up nanners
Mix with pudding/cool whip
Pour in bowl
Let set a couple of hours
EAT!!!

Here ya go, CF. I've had this recipe for more than 30 years (wasn't sure I still had it). This was my first employer's favorite pie. His name was Lee and he owned The General Country Store and Museum in Big Bear and was quite the character. He refused to accept $50 bills as payment in the store because they had Ulysses S Grant's image on them.

Old-fashioned Sweet-potato Pie

1/2 cup brown sugar
1/4 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
2 cups sweet potato, boiled, peeled and mashed
1 cup milk
2 eggs, slightly beaten
one crust plain pastry (see below)

Combine dry ingredients and mix with sweet potato.
Mix milk and eggs and combine with sweet potato mixture.
Line piepan with pastry and pour in filling.

Bake in a very hot oven (450 degrees F.) 10 minutes, then reduce temperature to 350 degrees F. and bake 45 to 55 minutes longer. Makes one nine-inch pie.

Plain Pastry for Pie


1 cup flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water


For Unbaked One-Crust Pie Crust:

Mix flour and salt in medium bowl. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).

Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. Continue with directions in pie recipe.

Just back from the In-Laws, they ain't got no puter, so we been off the air. Been to the Oral Surgon for CFK, twice, Orthodontist, CFK and Periodontist (better half) since Friday morning. Homecomming at our old Church (ate to much, again). All day drive Friday and again today.

A friend of ours made pumpkin soup for a Thanksgiving potluck we hosted. He baked and served it in a hollowed-out pumpkin. Purtiest darn thing you ever saw, and tasted fabulous.

I like the pumpkin tie, G-Rose! If I ever meet your fella, and he's wearing it, I'll tell him it looks just like pumpkin.

At annual matches, sometimes Jess won't even dress up for the Saturday night dinner. (He cleans up after the festivities. :re ) So, there I am in my fancy dress with a "dusty ol' cowpoke."

Then there's the part about :ss by the professional photographer. I've only managed to get him to do that once.

I've never made a pumpkin pie-I don't like them but I can make a peach cobbler that will make you drool all over your boots. In fact, I've had a request to make it for a few pards at the John Wayne Shootout in September.
