FOOT IN THE FIRE CHOCOLATE CAKE

2 cups flour
2 cups sugar
1/2 teaspoon salt
1 tablespoon butter
1 cup water
1/2 cup vegetable oil
3 tablespoons cocoa
1/2 cup buttermilk
3 eggs
1 teaspoon baking soda
1 teaspoon vanilla extract

Icing:
1 tablespoon butter
2 tablespoons cocoa
6 tablespoons milk
1 teaspoon vanilla
1 box powdered sugar

Combine flour, sugar, salt in large mixing bowl; set aside. In double boiler combine butter, water, oil, and cocoa. Bring to boil, stirring constantly. (You may do this in the microwave). Pour over dry mixture and mix well. Mix buttermilk, soda, eggs, and vanilla and add to combined mixture. Pour into large (12 x 17) greased and floured cookie sheet and bake at 350 degrees for 25 to 30 minutes. While cake is cooking, prepare icing by placing the butter, cocoa, and milk in saucepan or use microwave container and heat until hot, just to melt butter. Do not boil. Add remaining ingredients. Pour over warm cake and let cool enough to eat.

OUTRAGEOUS CHOCOLATE OATMEAL CHIPPER COOKIES

1 1/2 cups rolled oats
1 unsalted butter at room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1 egg
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 ounces semi sweet chocolate chips
3 ounces chocolate, chopped
3 ounces white chocolate, chopped
1/2 cup blanched almonds, chopped

Preheat the oven to 375 degrees. Place 1 1/4 cups of the oats in the container of a food processor and process until fine, 1 minute. Beat the butter with both sugars in the large bowl of an electric mixer until smooth. Beat in the egg and vanilla. Combine the processed oats with the flour, baking powder, baking soda, a salt. Slowly add to the butter mixture. Then stir in the remaining 1/4 cup oats, the chocolates, and the almonds. Drop the dough by spoonfuls onto the ungreased baking sheets, and bake until golden brown, about 10 minutes. Cool slightly on the sheets before removing.

BOILED COCOA COOKIE

2 cups sugar
1/2 cup cocoa
1/2 cup milk
1 stick oleo
3 cups quick cooking oatmeal
1 teaspoon vanilla
nuts, optional

Place the sugar, cocoa and milk into a saucepan and bring to a boil. Boil 2 minutes. Remove from stove and add the 1 stick oleo, the vanilla and then the 3 cups oatmeal. Add nuts if you wish. Wait a minute or so and drop by teaspoonfuls on WAXED PAPER and let set until cool.

BUTTER PECAN SQUARES

1/2 cup butter, softened
1/2 cup light brown sugar, packed
1 egg
1 teaspoon vanilla extract
3/4 cup flour
2 cups milk chocolate chips
3/4 cup pecans, divided, chopped

Heat oven to 350 degrees. Grease square pan, 8 x 8 x 2 or 9 x 9 x 2 In a small mixer bowl, cream butter, sugar, egg and vanilla until light and fluffy. Blend in flour. Stir in 1 cup chocolate chips and 1/2 cup pecans. Spread into prepared pans. Bake 25 to 30 minutes or until lightly browned. Remove from oven. Immediately, sprinkle with remaining 1 cup chips. Let stand 5 to 10 minutes or until chips soften; spread evenly. Immediately, sprinkle with remaining 1/4 cup pecans; press gently onto chocolate. Cool completely. Cut into squares.

CASTILLIAN HOT CHOCOLATE

1/2 cup unsweetened cocoa
1 cup sugar
7 tablespoons cornstarch
1/2 cup water
4 cups milk

Mix the cocoa and sugar together. Dissolve the cornstarch in the water and combine with the cocoa sugar mixture in a medium sized saucepan. Stir this until it is a smooth paste. Begin heating this mixture, continuously stirring it with a whisk. Gradually pour in the milk. Continue stirring as you bring it to a simmer. Simmer, stirring often, for about 10 minutes. The cocoa is ready when it thickens and is glossy and smooth.

:ty I am gonna try these babies. Empty Cases likes chocolate chip cookies and the oatmeat makes them better. Can I use quick oats. The Geriatric Kid said that his wife lets him eat cookies if they have oatmeat in them. Never know with him, he just like the cookies.:tban

:ty :ty I would walk:go a mile for these oatmeal chippers. I made them, double batch. They went like wild fire at one of our cowboy get together. :ty :ty I am a happy cowgirl with another cookie to bake.

I love a "boiled cocoa cookie", but we always called them "No Bake Cookies".

Do you know that it is actually healthy for you to eat Chocolate because it contains iron and antioxidents??? Hey! I'll take whatever excuse I can get!!!!

By the way, our family has always called Boiled Cocoa Cookie "No Bake Cookies", too. Try mixing ground cashews into the batter!!! Incidentally, cashews contain iron, too! hehe Seriously, though!
