Cadillac Margaritas

Ingredients:

Frozen Concentrated Limeade (12 oz size makes 64 oz of limeade. Or buy a half gallon of pre-made limeade. Minute Maid brand is best)
1/4 cup Roses lime juice/syrup
1/4 cup Grand Marnier liqueur
1 cup good tequila (we use Cuervo Gold)

Directions:

Mix all ingredients in a pitcher.
Dip rims of glasses in Roses Lime Juice then dip in margarita salt (if desired).
Serve over ice (Crushed or cubed).
Enjoy!

Marilyn's Chile Relleno Casserole



Casserole Ingredients:1 large (13 ounce) can of evaporated milk (NOT condensed milk)
4 eggs
1 large can whole Ortega chiles (27 or 28 oz. can OR four 7 oz. cans)
1 and 1/4 pound block of Monterey Jack cheese


Topping Ingredients:1 large onion (red, white, yellow, or sweet depending on your personal taste)
1 large bell pepper (green, yellow, red or orange)
2 stalks of celery
1 8-ounce can of tomato sauce (not tomato paste)
salt & pepper
1 teaspoon sugar
3/4 teaspoon chili powder
2 cups grated cheese (cheddar for a sharper taste, mixed colby and jack for a milder taste)


Casserole Directions:Preheat oven to 350 degrees.

Gently remove seeds from the chiles (they are fragile). Don't worry about burned spots on them, it's part of the processing to remove the skins. If you leave the seeds in the chiles, your casserole will be very spicy.

Arrange chiles in a large, greased oblong cake pan.

Cut Monterey Jack cheese into lengths as long as the chiles and 1/4" to 1/2" square (a little thicker than a pencil).

Lay cheese strips inside the chiles.

Whisk together the eggs and the evaporated milk and pour evenly over the chiles.

Bake at 350 degrees for 45 minutes. While the casserole is in the oven, prepare the topping.



Topping Directions:Dice and Saute in a little butter or oil: 1 large onion, 1 large bell pepper, 2 stalks of celery.

When these three ingredients are limp and the onion transparent, pour 8 ounces of tomato sauce over them and add salt & pepper to season plus one teaspoon sugar and 3/4 teaspoon chili powder and stir thoroughly.

Simmer for 10 minutes then pour over the casserole when it comes out of the oven.

Sprinkle two cups of grated cheese on top of the casserole and return to the oven until cheese melts (about 5 to 10 minutes)

Cut into squares with pancake turner and serve. This goes well with sour cream and black olives. Keep hot salsa on hand for those who like a spicier kick.
