Do not substitute anything!

1 c. white sugar
1 c. light brown sugar, packed firmly
2 sticks of butter (this is important)
2 eggs
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
3 cups of crushed potato chips
2 1/2 c. flour

Preheat oven to 350. Combine sugars, butter, and eggs in a bowl and mix until fluffy. Add everything else as listed in the order above adding flour last. Mix well. Drop by teaspoon-fuls onto ungreased cookie sheet and bake for 8-11 mins at 350. Yields ~4-6 doz depending on size.

My in-laws are coming to stay for Mother's Day weekend. My MIL is quite fond of potato chips, so I think I'll bake up a batch in her honor. (Then, as you know, when you eat cookies with other people, the calories cancel themselves out) Thanks, LL!

For those who prefer to dine alone, these cookies are already low in calories, since everyone knows broken chips have no calories!
