Allie Mo’s Steak Diane

1 T Olive Oil
1 T Butter
1 lb. Beef Filet, 1 to 1½ inch thick
6 Sliced Mushrooms (or 3 oz. Can)
4 T Diced Red Onion
1 t Dried Parsley (or 1 T Fresh)
3 T Brandy
1 T Worcestershire Sauce

Heat oil in 10” skillet. Add butter and heat until brown. Place filets in skillet. Cook on medium heat 3-4 minutes per side for rare or 4-5 minutes for medium.

Add Brandy and immediately cover pan with lid. Cook about 30 seconds. Add onion, mushrooms, and parsley. Stir and cook, until onion and mushrooms are tender, about 3 minutes. Add Worcestershire and cook until reduced and slightly thickened.
