TWO MINUTE FUDGE
1 pound confectioners sugar
1/2 cup cocoa
1/4 teaspoon salt
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup butter or margarine
1 cup nuts chopped
In 1 1/2 quarter casserole stir sugar, cocoa, salt, milk and vanilla together until partially blended (mixture is too stiff to thoroughly blend in all of dry ingredients). Put butter over top in center of dish. Microwave at High 2 minutes. Stir vigorously until smooth. If all butter has not melted in cooking, it will as mixture is stirred. Blend in nuts. Pour into wax paper lined 8 x 8 x 2 inch dish. Chill 1 hour in refrigerator or 20 to 30 minutes in freezer. Cut into squares.

WHITE DIAMOND FUDGE
2 cups sugar
1/2 cup dairy sour cream
1/3 cup light corn syrup
2 tablespoons butter
1/4 teaspoon salt
2 teaspoons clear vanilla
1/4 teaspoon rum extract
1 cup quartered candied cherries, divided
1 cup coarsely chopped walnuts or pecans divided
Combine sugar, sour cream, corn syrup, butter and salt in saucepan. Bring to a boil. Stir until sugar is dissolves. Boil without stirring to 236 degrees (soft ball stage) on candy thermometer. Remove from heat. Cool for 15 minutes. Do not stir. Add vanilla and rum extract. Beat until mixture looses its shine. Stir in 1/2 cup cherries and 1/2 cup walnuts. Pour into a buttered shallow pan. Spread remaining 1/2 cup cherries and remaining 1/2 cup walnuts across the top. Cool. Cut into diamond shapes.

Mr. Ruff: Please DON'T Stop!
Does anybody know the microwave fudge recipe. Dumb, I know, but curious. I had a box of stuff to make it once. It was essentially hard microwaved frosting, I think. If I had known that, I could have accidently made it myself. My microwave skills extend to water, cocoa, veggies and warming. Cooking the usual way... No Problem. Microwaving...ROCKS! I mean, I wind up with.... ROCKS!

FAST CHOCOLATE FUDGE
1/2 cup light or dark corn syrup
1/3 cup evaporated milk
3 cups semisweet chocolate chips
2 teaspoons vanilla
3/4 cup confectioner’s sugar
1 cup chopped nuts, optional
Line 8-inch square baking pan with plastic wrap. In three quart microwavable bowl, combine corn syrup and evaporated milk; stir until well blended. Microwave on high for 3 minutes. Stir in chips until melted. Stir in the confectioners sugar, vanilla and nuts. With wooden spoon, beat until thick and glossy. Spread in prepared pan. Refrigerate for two hours or until firm.

ONE BOWL CHOCOLATE FUDGE
8 squares semisweet chocolate
2/3 cup sweetened condensed milk

1/8 teaspoon salt
1 cup chopped walnuts
Microwave chocolate and milk in 1-1/2-quart bowl on high for 2 minutes, stirring after 1 minute. Stir until chocolate is completely melted and smooth. Stir in vanilla, salt and walnuts. Spread in greased 8x4 or 9x5-inch loaf pan. Refrigerate until firm, for about 2 hours; cut into small squares.
